Healthy Wholemeal Banana Bread
Makes: 10 slices

Cook time: 45 minutes
Ingredients
3 bananas (ripe)
1 ½ cups whole meal plain flour
1/4 cup manuka honey
2 eggs
2 tsp baking powder
¼ cup extra virgin olive oil
1/3 cup pumpkin seeds
¼ cup sunflower seeds
¼ cup walnuts (cut into small pieces)
Optional toppings: 1/8 cup of pumpkin and sunflower seeds and 1 teaspoon brown sugar
Method
Preheat oven to 180 degrees Celsius
Grease and line a loaf pan with grease proof paper
In a bowl, mash all 3 bananas with a fork.
Add the rest of the ingredients and mix until mixture is combined
Pour batter into loaf pan
If using optimal toppings, mix mixed seeds with brown sugar and sprinkle on top.
Place on middle shelf of the oven
Bake for 40- 45minutes or until a skewer inserted into the centre of the banana bread comes out clean.
